<p>A carne de sol pode ser feita com qualquer carne bovina, não há um corte específico mas sim um processo que deve ser seguido. Diferentemente da carne seca e do charque, a carne de sol não tem muito sal, apenas o suficiente para condimentar a carne. Não é uma técnica de preservação prolongada da carne, mas sim para conservação para preparo  próximo, não imediato.</p>

<p>A carne de sol de filé faz muito sucesso em restaurantes do nordeste. Pode ser acompanhada de macaxeira cozida, paçoca(farinha de mandioca com carne de sol desfiada), baião de dois, feijão verde, purê de mandioca e etc. A carne fica muito macia e ganha um sabor diferenciado promovido pelo processo de salga e exposição ao sol.</p>



<p>É importante ressaltar que a carne de sol, produto característico do nordeste brasileiro, é um produto parcialmente desidratado e semi preservado pela salga. No entanto, não possui regulamentação técnica que padronize a sua produção, sendo fabricado exclusivamente de forma artesanal. Há grande divergência entre os processos e não há uma maneira correta ou oficial.</p>

<p>Filé mignon bovino (ou qualquer outro corte)<br>Sal &#8211; 22g por kg de carne(2%);</p>



<h2 class="wp-block-heading">Preparo da carne de sol de filé</h2>



<p>Mantear a carne, ou seja, fazer cortes para abrir a carne de forma a aumentar a área de contato da carne com o sal e posterior exposição ao o sol e circulação de ar.</p>



<p>Aplicar o sal e espalhar bem pela carne.</p>



<p>Pendurar em local aberto, exposto ao sol e com circulação de ar, por 1 dia ensolarado. Pronto!</p>



<p>Antes de consumir finalize na churrasqueira, chapa ou frigideira até dourar o exterior, não deixe passar do ponto para a carne não perder a maciez. Se tiver, espalhe um fio de manteiga de garrafa ou azeite de dendê sobre a carne.</p>
