Muitos denominam de &#8220;carne enlatada&#8221; ou &#8220;carne na lata&#8221;, mas talvez não seja uma tradução precisa, pois a origem do nome provém dos grãos de sal originalmente usados na produção, que eram chamados de &#8220;corns of salt&#8221;. <span id="more-1631"></span>A palavra &#8220;corn&#8221; deriva do inglês antigo e é usada para descrever pequenas partículas ou grãos. Carne enlatada ou carne na lata seria a tradução para &#8220;canned beef&#8221; e não &#8220;corned beef&#8221;, que tem origem nos grãos de sal(corns), por isso corned beef. A confusão maior veio por conta do produto ser tradicionalmente enlatado, principalmente para o envio às tropas durantes as grandes guerras. É o tipo de produto que prefiro não traduzir.</p>
<p>A maioria das receitas incluem nitrito de sódio, que reage com a mioglobina da carne e fixa a cor rosada. É possível fazer sem o nitrito de sódio? Sim, só não vai ficar com a mesma cor a o sabor específico da cura também não existirá, mas não é um grande problema pois essa receita é bem condimentada. Particularmente prefiro usar, mas é um ingrediente opcional pois o risco de botulismo em uma carne salmourada e cozida por 3 horas é, se não totalmente, praticamente inexistente.</p>

<p>A receita tem muitos ingredientes, principalmente condimentos, mas é muito fácil de fazer.</p>
<h2>Ingredientes</h2>
<h3>Mix de especiarias para conserva</h3>
<ul>
<li>2 pedaços de canela em pau;</li>
<li>14 gramas de pimenta jamaica;</li>
<li>20 gramas de pimenta do reino moída;</li>
<li>12 gramas de pimenta calabresa seca;</li>
<li>24 folhas de louro;</li>
<li>20 gramas de semente de mostarda;</li>
<li>20 gramas de semente de coentro;</li>
<li>6 gramas de nóz moscada moída;</li>
<li>6 gramas de cravo inteiro;</li>
<li>8 gramas de gengibre em pó.</li>
</ul>
<p><strong>Preparo do mix</strong>: misture todos os ingredientes e soque rapidamente em um pilão ou pulse algumas vezes no moedor de grãos/liquidificador/processador. Previamente toste as sementes caso queira extrair ainda mais sabor.</p>

<li>2 litros de água;</li>
<li>200 gramas de sal;</li>
<li>50 gramas de açúcar;</li>
<li>8 gramas de <a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/">sal de cura 1</a> (6,25% de nitrito e 93,75% de sal);</li>
<li>2 dentes de alho amassados;</li>
<li>10 gramas do Mix de especiarias para conserva.</li>

<h2>Preparo</h2>
<p>1) Coloque para ferver por 2 minutos a água com 10 gramas do mix de especiarias, o sal, açúcar, sal de cura e o alho, desligue o fogo e espere esfriar. Mergulhe a carne e refrigere por 5 dias;</p>

<p>2) Retire do refrigerador e lave a carne em água corrente;<br />
3) Em uma panela grande, coloque a carne, cubra com água e acrescente mais 10 gramas do mix de especiarias;<br />
4) Deixe ferver, reduza o fogo e deixe cozinhar por 3 horas ou até a carne ficar bem macia, desmanchando;</p>

<p>5) Remova a carne e guarde o caldo para usar como molho ao servir;<br />
6) Corte em pedaços finos e sirva gelado ou morno.</p>
