<h2 class="wp-block-heading">Preparo do pastrami</h2>



<ul class="wp-block-list">
<li>Misture os condimentos e aditivos do pastrami em uma tigela pequena;</li>



<li>Esfregue generosamente a mistura de especiarias em todos os lados do peito de boi. Certifique-se de pressionar a mistura de especiarias na carne para que ela adira bem;</li>



<li>Coloque o peito de boi temperado em um saco plástico grande ou em um recipiente hermético e leve à geladeira. Deixe marinar por pelo menos 15 dias, virando ocasionalmente para garantir que todos os lados da carne sejam igualmente temperados;</li>



<li><strong>NO DEFUMADOR</strong>: prepare o seu defumador a uma temperatura de 90ºC e adicionar lascas de madeira. Madeiras como nogueira, macieira e laranjeira funcionam bem para defumar pastrami;</li>



<li>Coloque o peito de boi no defumador e deixe defumar por cerca de 8 horas, ou até que o interior da carne chegue em 72ºC. Adicione mais lascas de madeira conforme necessário para manter a fumaça;</li>



<li><strong>NA PANELA</strong>: Coloque serragem no fundo de uma panela alta. Coloque algo para manter a carne no alto da panela. </li>



<li>Coloque a panela em fogo baixo, suficiente para a madeira soltar fumaça, mantenha por 1 hora com a tampa fechada ou um pouco aberta;</li>



<li>Após a etapa de defumação na panela, pré-aqueça o forno a 90°C. Enrole o peito de boi firmemente em papel alumínio e coloque-o em uma assadeira. Asse no forno por mais 6 horas;</li>



<li>Retire o pastrami do forno e deixe esfriar por alguns minutos antes de desembrulhar;</li>



<li>Quando estiver pronto para servir, fatie o pastrami em fatias finas. Sirva no pão de centeio com mostarda amarela e acompanhamentos de sua escolha.</li>

										<content:encoded><![CDATA[<div><strong>Pastrami</strong> é um produto curado em salmoura e posteriormente defumado e, opcionalmente, antes de servir pode ser cozido lentamente até ficar bem macio, desmanchando. A receita do pastrami é muito parecida com a do corned beef, pois pode usar o mesmo corte bovino e o processo inicial é idêntico. A diferença está na defumação.<span id="more-1766"></span>
<p>Após a defumação pode ser assado lentamente em forno baixo para ficar bem macio, desmanchando. Tem sabor e aroma intenso pelo uso das espciarias e o defumado pode ser mais intenso ou menos intenso, dependendo da madeira e processo de defumação. Fica ótimo em sanduíches ou como prato principal acompanhando legumes, batatas ou o nosso tradicional arroz com feijão.</p>
<p>O <strong>pastrami</strong> popularizou-se nos Estados Unidos consumido em sanduíches e foi introduzido naquele país pelos imigrantes gregos no início da década de 60. Mas, pelo que consta, não foram os gregos que criaram o <strong>pastrami</strong>, mas sim os turcos, originalmente chamado de <em>Pastırma</em>.</p>
<p>A maioria das receitas incluem sal de cura(nitrito de sódio), que reage com a mioglobina da carne e fixa a cor rosada. É possível fazer <strong>sem sal de cura</strong>? Sim, só não vai ficar com a mesma cor e o sabor específico da cura também não existirá, mas não é um grande problema pois essa receita é bem condimentada. Particularmente prefiro usar pois é um conservante muito recomendado em produtos que passam por defumação.</p>

<p>A receita tem muitos ingredientes, principalmente condimentos, mas é muito fácil de fazer.</p>

<h3>Mix de especiarias para conserva</h3>

<li>2 pedaços de canela em pau;</li>
<li>14 gramas de pimenta jamaica;</li>
<li>20 gramas de pimenta do reino moída;</li>
<li>12 gramas de pimenta calabresa seca;</li>
<li>24 folhas de louro;</li>
<li>20 gramas de semente de mostarda;</li>
<li>20 gramas de semente de coentro;</li>
<li>6 gramas de nóz moscada moída;</li>
<li>6 gramas de cravo inteiro;</li>
<li>8 gramas de gengibre em pó.</li>

<p><strong>Preparo do mix</strong>: misture todos os ingredientes e soque rapidamente em um pilão ou pulse algumas vezes no moedor de grãos/liquidificador/processador. Previamente toste as sementes caso queira extrair ainda mais sabor.</p>

<h2>Preparo</h2>
<p>1) Coloque para ferver por 2 minutos a água com 10 gramas do mix de especiarias, o sal, açúcar, sal de cura e o alho, desligue o fogo e espere esfriar. Mergulhe a carne e refrigere por 3 a 5 dias;</p>

<p>3) Aplique uma camada de mostarda em grãos triturada(processador, liquidificardor ou pilão) em volta da peça, misturando uniformemente;</p>

<h3>Defumação</h3>
<p>Apliquei uma defumação bastante simples e fácil de fazer em casa, mas com controle de temperatura bem rudimentar. Deixei um termômetro tipo espeto inserido e fui controlando a temperatura abrindo ou fechando a entrada de ar. É um método rústico mas funcional. Quanto mais ar fluir mais calor será gerado.</p>
<p>4) Acenda uma churrasqueira e deixe o carvão pegar brasa, deposite todo o carvão em brasa em um dos lados da churrasqueira, do outro lado acomode um recipiente com água;<br />5) Acomode a carne em uma grelha sobre o recipiente com água;</p>

<p>6) Deixe um termômetro próximo da carne e tampe a churrasqueira;<br />7) Verifique de tempos em tempos a temperatura, madeira e carvão, acrescente caso esteja faltando e abra ou feche as saídade de fumaça para aumentar ou diminuir a queima/temperatura;<br />8) Defume por 3 a 5 horas em aproximadamente próxima a 80ºC. O tempo pode variar pela espessura da carne, o ideal é determinar pela temperatura interna da carne;<br />9) Caso queira pode medir a temperatura interna da carne e encerrar o processo quando passar de 65ºC;<br />10) Refrigere, vai durar por, pelo menos, duas semanas na geladeira.</p>
<h2>Como servir o pastrami?</h2>
<p>Há diversas opções, as mais comuns são:</p>
<ul>
<li>Fatie finamente e utilize como recheio de sanduíches;</li>
<li>Também fica muito bom fatiado finamente e frito com cebola em frigideira, desta forma pode acompanhar arroz, feijão, massas ou também recheando sanduíches;</li>
<li>Outra boa opção como prato principal é assar lentamente coberto com papel alumínio no forno a 90ºC até ficar bem macio.</li>
