Recipe for chicken sausage with homemade smoked tomatoes, parmesan cheese and basil.
Chicken sausage ingredients
400g boneless chicken breast;
600g boneless chicken thighs, with the skin on;
5 fresh smoked tomatoes – optionally you can use dried, non-smoked tomatoes;
100g grated parmesan cheese;
13g salt;
5g sugar;
3g type curing salt 1 (6.25% of nitrite and 93.75% of salt) – optional for more protection, color and flavor;
3g antioxidant with erythorbate – optional for use in combination with curing salt;
10 chopped fresh basil leaves;
100 ml of water.
1 meter of pork tripe
How to prepare chicken sausage
Cut the tomatoes in half, remove the seeds and smoke at 90ºC for 8 hours. If you don't want to smoke, use canned dried tomatoes. But smoking adds a special flavor;
Soak the tomatoes in olive oil or vegetable oil and leave for 1 day;
Chop the tomatoes and basil and mix them in olive oil with a teaspoon of salt and 100 ml of water. Leave it for another day to enjoy;
Cut the chicken breast into small pieces and grind the thighs and skins with the 10mm cutting disc;
Mix all the condiments, except the canned tomatoes, until you get a good mix;
Add the canned tomatoes to the meat and mix lightly. Don't mix too much to prevent the tomato from falling apart;
Embed in 28 to 32 gauge pork casing;
Roast on the barbecue.

Hi Carlos, yes you can do it with minced meat with a knife. Just mix well to get a good alloy.

Yes, you can, cut the tomatoes, apply smoke powder and then leave in the oven until dehydrated. The amount will vary depending on the smoke purchased, but, in general, add a level teaspoon per tomato.
