<p>Receita de linguila jalapeño defumada em casa usando uma panela comum. É bem fácil fazer defumação em casa utilizando uma panela no fogão comum a gás, basta utilizar uma panela alta para que haja espaço entre a serragem, que é colocada no fundo da panela, e o alimento, que fica na parte de cima da panela. Fiz umna linguiça utilizando essa pimenta jalapeño defumada.</p>

<p>Ingredientes</p>



<p>Pimentas jalapeño;<br>Azeite de oliva;<br>1kg de Pernil de porco;<br>10g de sal;<br>10g de açúcar,<br>5g de alho em pó;<br>5g de cebola em pó;<br>3g de <a href="https://charcutaria.org/produto/antioxidante-fixador-af001/" data-type="product" data-id="5568">antioxidante</a>; &#8211; opcional<br>3g de <a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/" data-type="product" data-id="1755">sal de cura tipo 1</a>; &#8211; opcional<br>100g de <a href="https://charcutaria.org/produto/serragem-wood-chips-macieira/" data-type="product" data-id="7228">serragem de macieira</a>;<br>100ml de água gelada;<br>1 metro de tripa de porco. (utilizei a <a href="https://charcutaria.org/produto/tripa-suina-tubing/" data-type="product" data-id="44546">tripa de porco tubing</a> para facilitar)</p>



<p>Preparo da linguiça com pimenta jalapeño defumada</p>



<ul class="wp-block-list">
<li>Cortar as pimentas ao meio e acomodar na parte superior de uma panela grande, tipo caçarola;</li>



<li>Colocar a serragem no fundo da panela e deixar no fogo, tampada, para que a serragem queime e defuma as pimentas;</li>



<li>Remover as pimentas defumadas e colocar em um vidro, adicionando azeite ou outro óleo vegetal até cobrir as pimentas;</li>



<li>Picar a carne de corno com uma faca ou moer com corte de 10mm;</li>



<li>Misturar bem a carne com todos os temperos e a água;</li>



<li>Picar a pimenta no tamanho desejado e misturar à carne;</li>



<li>Embutir em tripa de porco;</li>



<li>Assar na churrasqueira, air fryer ou forno.</li>

<p>O tempero chinês de cinco especiarias é uma mistura clássica de especiarias chinesas que combina cinco sabores principais: doce, azedo, amargo, salgado e umami. É amplamente usado na culinária chinesa para adicionar profundidade e complexidade aos pratos. Aqui estão os ingredientes tradicionais:</p>

<h3 class="wp-block-heading">Como fazer o tempero chinês de cinco especiarias</h3>



<p>Torre especiarias inteiras (anis estrelado, cravo, canela, pimenta de Sichuan e sementes de erva-doce) em uma panela seca em fogo baixo por 1-2 minutos até que fiquem perfumadas. Tenha cuidado para não queimá-las.</p>



<p>Deixe as especiarias esfriarem e, em seguida, triture-as até formar um pó fino usando um moedor de especiarias ou um pilão.</p>



<p>Guarde em um recipiente hermético em um local fresco e escuro por até 6 meses.</p>

<ol start="1" class="wp-block-list">
<li><strong>Prepare a Carne</strong>: corte a carne de porco e a gordura em cubos pequenos (cerca de 0,5 cm). Alternativamente, você pode moer a carne grossamente para uma textura mais uniforme;</li>



<li><strong>Branquear a gordura</strong>: para que a gordura fique com a cor mais vistosa, preservando o branco, mergulhe-a em água fervendo por 2 minutos, retire e esfrie em água gelada.</li>



<li><strong>Tempere a Carne</strong>: adicione a gordura, o açúcar, molho de soja, vinho de arroz, sal, tempero de cinco especiarias, pimenta branca e <a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/">sal de cura</a> (se estiver usando) à carne. Misture bem até que os temperos estejam uniformemente distribuídos. Cubra a tigela e deixe marinar na geladeira por pelo menos 4 horas ou durante a noite;</li>



<li><strong>Prepare as Tripas</strong>: lave as tripas sob água fria para remover o sal ou conservantes. Deixe-as de molho em água por 30 minutos para amaciar;</li>



<li><strong>Encha as Linguiças</strong>: encha cuidadosamente a tripa com a mistura de carne temperada, garantindo que não haja bolhas de ar. Torça a linguiça em links de 10-15 cm, dependendo da sua preferência;</li>



<li><strong>Seque as Linguiças</strong>: pendure as linguiças em um local fresco, seco e bem ventilado por 5 a 10 dias para secar. Alternativamente, você pode usar um defumador ou desidratador ajustado para 50°C por 12 a 24 horas e depois pendurar em local protegido de insetos por mais 5 a 10 dias. As linguiças devem ficar firmes ao toque quando estiverem totalmente secas;</li>



<li><strong>Armazene ou Cozinhe</strong>: depois de secas, armazene as linguiças em um recipiente hermético na geladeira por até 2 semanas ou congele por até 3 meses. São tradicionalmente usadas no preparo do arroz chinês.</li>

<p>Receita de linguiça para o café da manhã dos charcuteiros! Balanceada e saborosa, perfeita para começar bem o dia-a-dia daqueles que sabem trabalhar e cuidar desse alimento sagrado e magnífico que é a proteína animal.</p>

<p>Essa receita foi baseada na linguiça Relleno de Huéscar da província de Granada, região da Andaluzia, Espanha. Originalmente é feita de carne de porco, frango, presunto cru, ovos, pão e salsa. Outras carnes como coelho, frango, peru ou ganso podem ser usadas. A linguiça é de cor amarelada clara devido ao tempero de açafrão verdadeiro(pistilo da flôr), mas &#8220;abrasileiramos&#8221; e substituímos pelo açafrão-da-terra(cúrcuma), que também provê coloração amarelada e tem ação anti-inflamatória e antioxidante.</p>

<li>150g Carne de porco magra;</li>



<li>150g Presunto cozido;</li>



<li>200g Peito de frango;</li>



<li>250g Pão amanhecido (preferencialmente fermentado naturalmente);</li>



<li>100g Queijo mussarela;</li>



<li>4 Ovos &#8211; 250g;</li>



<li>12g Sal;</li>



<li>2g Páprica doce;</li>



<li>1g Pimenta branca;</li>



<li>0,5g Açafrão da terra (anti-inflamatório e antioxidante natural);</li>



<li>150ml Suco de laranja;</li>



<li>Nirá(alho japonês) ou cebolinha à gosto.</li>
</ul>



<h2 class="wp-block-heading">Modo de preparo</h2>



<ul class="wp-block-list">
<li>Moer as carnes em disco de corte fino(6mm ou menor);</li>



<li>Picar o presunto, o queijo e o pão;</li>



<li>Bater os ovos;</li>



<li>Misturar bem a carne com os ovos, pão e água até obter uma consistência uniforme, com boa liga;</li>



<li>Misturar levemente o presunto e o queijo até distribuir uniformemente;</li>



<li>Embutir em tripa de porco calibre 28 a 36 mm;</li>



<li>Cozinhar em água a 90ºC, forno ou na air fryer a 140ºC por 20 minutos;</li>



<li>Resfriar em água gelada;</li>



<li>Antes de consumir doure as linguiças em uma panela com azeite.</li>



<li>Refrigerar bem embalada e consumir em até 5 dias.</li>

<p>Essa combinação é usada em muitos pratos, incluindo hambúrgueres, sanduíches, pizzas, batatas assadas, macarrão com queijo e muitos outros. Nada mais natural do que transportar essa combinação para uma linguiça em um churrasco com os amigo e família.</p>



<h2 class="wp-block-heading">Ingredientes da linguiça de queijo cheddar e bacon</h2>

<li>700 g de pernil de porco;</li>



<li>200 g de bacon;</li>



<li>100 g de queijo cheddar inglês maturado(rígido);</li>



<li>8 g de sal;</li>



<li>2 g de <a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/" data-type="product" data-id="1755">sal de cura tipo 1</a>; (6,25% de nitrito e 93,75% de sal)</li>



<li>2 g de <a href="https://charcutaria.org/produto/antioxidante-fixador-af001/" data-type="product" data-id="5568">antioxidante</a>; (com eritorbato de sódio)</li>



<li>2 g de pimenta preta moída;</li>



<li>100 ml de água gelada;</li>



<li>2 metros de<a href="https://charcutaria.org/produto/tripa-suina-natural-para-linguica-15-metros/" data-type="product" data-id="27586"> tripa suína calibre 28/32</a>.</li>

<h2 class="wp-block-heading">Preparo da linguiça de queijo cheddar e bacon</h2>



<ol class="wp-block-list">
<li>Corte o pernil de porco em cubos pequenos e passe pelo moedor de carnes ou, caso não tenha moedor, pique finamente com uma faca;</li>



<li>Corte em pedaços pequenos o bacon e o queijo cheddar;</li>



<li>Misture bem a carne e o bacon com todos os condimentos até ficar homogêneo e com boa liga. A carne tem que ficar pegajosa, grudenta;</li>



<li>Acrescente o queijo e misture suavemente com uma colher, para não desmanchar;</li>



<li>Coloque na tripa de porco utilizando um equipamento específico para embutir linguiças ou use um funil com boca larga;</li>



<li>Deixe na geladeira por, pelo menos, 12 horas antes de assar;</li>



<li>Asse na churrasqueira com carvão, em temperatura moderada, longe da chama, para obter um sabor ainda melhor.</li>

<p>Tripa grossa é um embutido tradicional da região sul do Brasil, em especial no Rio Grande do Sul. É uma mistura de condimentos, vegetais, arroz, tomate e carnes diferentes, podendo ser de origem suína, bovina e aves. </p>

<p>É originalmente embutido em tripa bovina reta, mas pode ser embutido em diferentes tripas. Pode ser assada no forno, na churrasqueira, fritadeira elétrica(air fryer) ou defumada. É um alimento completo e balanceado por conter proteínas animais, diversos legumes e vegetais.</p>



<p>250g carne frango picado;<br>250g carne bovina picada;<br>2 batatas picadas;<br>2 tomates picados, sem sementes;<br>1 xícaras de arroz cozido;<br>1 xícara de ervilhas congeladas;<br>28g sal;<br>2g pimenta preta;<br>1 cenoura picada;<br>1 cebola picada;<br>4 dentes de alho amassados;<br>3 ovos inteiros;<br>salsinha e cebolinha;<br>3g <a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/" data-type="product" data-id="1755">sal de cura 1</a> (6,25% de nitrito e 93,75% de sal) &#8211; opcional;<br>3g <a href="https://charcutaria.org/produto/antioxidante-fixador-af001/" data-type="product" data-id="5568">antioxidante</a> (com eritorbato).</p>

<p>Tradicionalmente feita com carne de carneiro e várias especiarias. Podem ser servidas com cuscuz, em sanduiches, fritas com ovos ou recheando pasteis.</p>



<h2 class="wp-block-heading">Ingredientes</h2>



<p>750 g de cordeiro desossada;<br>250 g de gordura rígida de boi ou de porco;<br>90 g de pimentões vermelho tostado(1 pimentão grande);<br>20 g de sal;<br>9 g de alho picado ou 5g de <a href="https://charcutaria.org/produto/alho-em-po/" data-type="product" data-id="6510">alho em pó</a>;<br>8 g de <a href="https://charcutaria.org/produto/paprica-picante/" data-type="product" data-id="15542">páprica em pó</a>;<br>5 g de açúcar;<br>2 g de <a href="https://charcutaria.org/produto/pimenta-calabresa-moida/" data-type="product" data-id="6608">pimenta calabresa</a> moída ou em flocos;<br>2 g de <a href="https://charcutaria.org/produto/pimenta-jamaica/" data-type="product" data-id="5142">pimenta Jamaica</a> moída;<br>2 g de gengibre em pó;<br>2 g de cominho;<br>80 mililitros de vinho tinto seco;<br>2 metros de <a href="https://charcutaria.org/produto/tripa-de-carneiro-ovina-22-24/" data-type="product" data-id="14923">tripa de carneiro</a>.</p>



<h2 class="wp-block-heading">Preparo da linguiça merguez</h2>



<ol class="wp-block-list"><li>Moa a carne e a gordura usando um moedor com o disco de corte fino ou fatie finamente com uma faca;</li><li>Adicione todos os ingredientes e misture bem com as mãos ou com um equipamento apropriado. Misture até ficar pegajoso, cerca de 1 minuto em velocidade média;</li><li>Encha a linguiça nas tripas de carneiro;</li><li>Amarre ou torça de 25 em 25 cm;</li><li>Leve à geladeira ou congele;</li><li>Finalize na panela, grelha, forno ou churrasqueira.</li></ol>



<h2 class="wp-block-heading">Como tostar os pimentões</h2>



<ol class="wp-block-list"><li>Asse os pimentões diretamente na chama de um fogão a gás ou em uma grelha sobre carvão bem quente, virando com frequência, até que as peles estejam carbonizadas.</li><li>Remova a pele carbonizada, corte ao meio e retire as sementes.</li></ol>

<h2 class="wp-block-heading">Ingredientes da linguiça de frango</h2>



<p>400g peito de frango desossado;<br>600g sobrecoxas de frango desossadas, com a pele;<br>5 tomates frescos defumados &#8211; opcionalmente pode usar tomates secos, não defumados; <br>100g queijo parmesão ralado;<br>13g sal;<br>5g açúcar;<br>3g <a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/" data-type="product" data-id="1755">sal de cura tipo </a>1 (6,25% de nitrito e 93,75% de sal) &#8211; opcional para mais proteção, cor e sabor;<br>3g <a href="https://charcutaria.org/produto/antioxidante-fixador-af001/" data-type="product" data-id="5568">antioxidante com eritorbato</a> &#8211; opcional para uso combinado com o sal de cura;<br>10 folhas de manjericão fresco picado;<br>100 ml de água.<br>1 metro de <a href="https://charcutaria.org/produto/tripa-suina-natural-para-linguica/" data-type="product" data-id="1967">tripa de porco</a></p>



<h2 class="wp-block-heading">Modo de preparo da linguiça de frango</h2>



<p>Cortar os tomates ao meio, remover as sementes e defumar a 90ºC por 8 horas. Caso não queira defumar, use tomates secos em conserva. Mas a defumação agrega um sabor especial;<br>Mergulhar os tomates em azeite ou óleo vegetal e deixar por 1 dia;<br>Picar os tomates e o manjericão e misturar ambos no azeite com uma colher de chá de sal e 100 ml de água. Deixar por mais 1 dia curtindo;<br>Cortar o peito de frango em pedaços pequenos e moer as sobrecoxas e as peles com o disco de corte 10mm;<br>Misturar todos os condimentos, exceto a conserva de tomates, até obter uma boa liga;<br>Acrescentar a conserva de tomates às carnes e misturar levemente. Não misture muito para o tomate não desmanchar;<br>Embutir em tripa de porco calibre 28 a 32;<br>Assar na churrasqueira.</p>

<h2 class="wp-block-heading">Modo de preparo da linguiça toscana caseira</h2>



<ol class="wp-block-list">
<li>Limpe o pernil, tire ossos o couro mas mantenha o máximo de gordura, corte com uma faca em cubos bem pequenos ou moa em disco com furos grandes(10mm);</li>



<li>Misture bem todos os ingredientes por 2 minutos ou até a carne ficar com boa liga, pegajosa;</li>



<li>Embutir em tripa suína ou de colágeno comestível calibres entre 26 e 34. Para embutir pode usar um funil largo ou uma ensacadeira de linguiças, que vai facilitar bastante o processo;</li>



<li>Torça os gomos de 10 em 10 centímetros e amarre as pontas da tripa;</li>



<li>Deixe 12 horas na geladeira antes de assar;</li>



<li>Armazene na geladeira, preferencialmente à vácuo. Refrigerada tem validade entre 20 e 30 dias. Congele por até 3 meses.</li>

Independentemente de sua origem é um produto nacional muito apreciado em todo o país, principalmente em pizzas.</p>



<p>Pela regulamentação técnica oficial a linguiça calabresa deve ser feita exclusivamente de carnes suína, curada e com sabor picante característico da pimenta calabresa. <h2 class="wp-block-heading">Preparo da linguiça calabresa</h2>



<ol class="wp-block-list">
<li>Limpe o pernil de porco, removendo ossos, pele e tecido rígido. Corte em cubos de 2 a 3 cm.</li>



<li>Misture todos os condimentos secos e 10 g da fumaça líquida na carne. Espalhe bem e armazene na geladeira por 12 horas;</li>



<li>Com um disco de corte com furos pequenos, moa as carnes e misture bem, por 2 minutos, até a carne criar uma boa liga, ficar pegajosa.</li>



<li>Embutir em <a href="https://charcutaria.org/produto/tripa-de-colageno-comestivel-40mm-15-metros/" data-type="product" data-id="47106">Tripa de colágeno 40 coloração de defumação</a>  ou sem a cor característica usando <a href="https://charcutaria.org/produto/tripa-suina-natural-para-linguica/" data-type="product" data-id="1967">tripa suína</a> ou <a href="https://charcutaria.org/produto/tripa-bovina-torta-semi-seca-salame-linguica/" data-type="product" data-id="3413">bovina torta</a> e torcer em gomos de 15 cm em 15 cm;</li>



<li>Pincele ou espalhe 10g de fumaça líquida pelo exterior das linguiças. Pendure para secar por 12 horas;</li>



<li>Asse em forno a 90ºC por 3 horas ou até o interior das linguiças chegarem em 70ºC;</li>



<li>Resfrie, embale a vácuo ou com várias voltas de filme plástico pvc e armazene na geladeira. A validade será de, aproximadamente, 90 dias.</li>
</ol>

<p>A sobrasada original é um embutido espanhol curado, feito com carne e gordura de porco, temperada principalmente com sal e páprica. É embutida em tripa e tem uma maturação lenta.</p>



<p>É tradicional das Ilhas Baleares. É utilizada em várias receitas da cozinha maiorquina, como o &#8220;arròs brut&#8221; ou cozido e misturado com mel.</p>

<p>A sobrasada surgiu da necessidade de armazenar alimentos por longos períodos de tempo. A origem do seu nome está na Sicília, onde se praticava uma técnica conhecida como soppressa, que significa &#8220;picada&#8221;, aplicada à carne. Desta região passou para a Península Ibérica através do comércio marítimo, e de Valência para Maiorca.</p>



<p>O uso da páprica é um sinal de preservação dos alimentos, pois a carne com a cor vermelha remete à conservação. Com o passar do tempo o processo de produção foi se aperfeiçoando, e em 1993 o Governo das Baleares reconheceu a Denominação Específica para a sobrasada maiorquina. Em 1996, a União Europeia concedeu-lhe o selo de Indicação Geográfica.</p>



<p>A Crema Sobrasada é a versão cremosa da sobrasada, utilizada como um patê em pães e torradas. Tem textura similar às mettwursts alemãs, que no Brasil foram popularizadas pelo nome de <a href="https://charcutaria.org/receitas/linguica-blumenau-mettwurst-pastosa/" data-type="post" data-id="7464">linguiça Blumenau</a>.</p>



<h2 class="wp-block-heading">Ingredientes &#8211; Crema de sobrasada</h2>



<p>Costela de porco  &#8211; 700g;<br>Pernil de porco &#8211; 300g;<br>Sal &#8211; 20g;<br>Páprica defumada &#8211; 18g;<br>Açúcar &#8211; 5g;<br>Cebola em pó &#8211; 5g<br><a href="https://charcutaria.org/produto/sal-de-cura-1-cura-rapida-linguicas-e-salsichas-b001/" data-type="product" data-id="1755">Sal de cura 1</a> (6,25% de nitrito e 93,75% de sal) &#8211; 3g;<br><a href="https://charcutaria.org/produto/antioxidante-fixador-af001/" data-type="product" data-id="5568">Antioxidante</a> (com eritorbato de sódio) &#8211; 3g;<br>Pimenta preta &#8211; 3g;<br><a href="https://charcutaria.org/produto/antioxidante-extrato-de-alecrim-em-po/" data-type="product" data-id="22900">Extrato de alecrim</a> (antioxidante natural)- 1g;<br><a href="https://charcutaria.org/produto/cultura-starter/" data-type="product" data-id="5561">Cultura starter</a> (bactérias láticas) &#8211; 0,2g.</p>



<h2 class="wp-block-heading">Modo de Preparo &#8211; Crema de sobrasada</h2>



<p>Cortar as carnes pedaços pequenos e juntar o resto dos ingredientes, exceto a cultura starter;</p>



<p>Deixe o preparo repousar por duas horas;</p>



<p>Moer em disco fino;</p>



<p>Diluir a cultura starter em 50ml de água filtrada;</p>



<p>Embutir no colágeno diâmetro 24 com milímetros de diâmetro, ou maior. É importante compactar bem a carne para que não hajam espaços vazios.</p>



<p>Amarre cada segmento entre 20 e 30 centímetros.</p>



<p>Pendure em temperatura ambiente, ideal 24ºC, por 72 horas para que ocorra a fermentação das bactérias da cultura starter;</p>



<p>Pendure em ambiente frio(ideal 12ºC), úmido(ideal 80%) e escuro;</p>



<p>Após 10 dias, retire a sobrasada da câmara de maturação, remova a tripa e passe pelo moedor novamente;</p>



<p>Misture bem com óleo vegetal(preferencialmente azeite de oliva) até ficar pastoso;</p>



<p>Consuma com pães como um patê.</p>
